Estelle Tracy is a French-born chocolate sommelier based in the Philadelphia area. She discovered the world of bean-to-bar chocolate after reviewing 37 chocolate bars in honor of her 37th birthday on Halloween 2015. That personal challenge opened her eyes to the flavors, stories, and people behind craft chocolate. Since then, she has shared these discoveries through hundreds of chocolate tastings, pairings, and talks around the world. She is the founder of 37 Chocolates, a chocolate education company.
